Kellogg's Southern Texas Caviar Salsa

15 oz black-eyed peas

8 oz tomatoes

1 stalk celery

1/4 cup red onion

1 each jalapeno pepper

2 Tbs fresh lime juice

1/4 teaspon ancho chile powder

2 Tbs fresh cilantro

1 1/2 Tbs apple cider vinegar

4 Tbs extra virgin olive oil

1 tsp ground cumin

1. Put the black-eyed peas in a sieve and rinse them thoroughly under cold water. Place in a mixing bowl. Add tomatoes. Gently stir in celery, red onion, jalapeno, lime juice, ancho chile, cilantro, vinegar, oil and cumin. Season to taste with salt and hot sauce. Refrigerate until cool.

2. Evenly distribute salsa mixture into serving dishes. Place flatbread crackers vertically into each bowl. Sprinkle with fresh cilantro and serve.
