Eggplant Towers with President® Feta Crumbled

  2 medium eggplants

  22 cherry tomatoes, halved

  1 handful fresh basil

  1 clove garlic, crushed

  4 Tbs pine nuts

  Salt and pepper

  1 Tbs olive oil

Slice your eggplant into 1-inch thick circles. Fry in as little oil as possible in a non-stick pan for about 3–4 minutes on each side. Place them aside when they are all cooked.

For the filling: Place your tomatoes in a bowl. Add the basil (shredded), and a clove of crushed garlic. Add 1 Tablespoon of olive oil, salt and pepper, feta cheese and mix well. In a non-stick pan with no oil, fry the pine nuts for 2–3 minutes, continuously tossing so they do not burn and add to your bowl. Stir again.

On a large baking tray, take 4 of the largest eggplant rings and place 1 of each on the tray. Add some mixture from the bowl and place the next smallest ring (and so on) until you have a neat stack like a pyramid.

Cook in a 180 degree oven for 12–15 minutes.
