Brownie Brittle® Lemon Squares

Prep Time: 15 minutes

Cook Time: 35 minutes

Servings: 8

Tangy lemon sqares with a Brownie Brittle crumb crust.

Ingredients

  Crust:

  1 stick melted butter

  2 cups Brownie Brittle® crumbs

  Filling:

  7 extra-large eggs at room temperature

  2 cups granulated sugar

  2 Tbs grated lemon zest (4 to 6 lemons)

  1 cup freshly squeezed lemon juice

  1 cup flour

Directions

Crust:

Mix 1 stick of melted butter with 2 Cups of Brownie Brittle crumbs.

Press into a greased 9 x 13 pan and Bake for 12 min at 350°

Filling:

For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature. Cut into 1 1/2 inch squares.

NOTE: Sheila recommends 8 mins in oven for Brittle crust. I found that 12-15 worked best for me.
