Carr's Sesame Crackers with White Bean Hummus and Shrimp by Chef Ben Ford

Ingredients

  1 cup canned cannellini (white kidney) beans, rinsed and drained

  2 tablespoons chopped fresh oregano

  1 tablespoon white vinegar

  1 tablespoon lemon juice

  1 tablespoon tahini

  1 tablespoon minced roasted garlic

  1 1/2 teaspoons grated lemon peel

  1 1/2 teaspoons olive oil

  30 Carr's Crackers Carr's® Table Water® Baked with Toasted Sesame Seeds

  30 cooked, peeled and deveined medium shrimp

  Chopped fresh oregano (optional)

Directions 1. In food processor combine beans, oregano, vinegar, lemon juice, tahini, garlic, lemon peel and olive oil. Cover and process until smooth.

2. Spread bean mixture on crackers. Top each with 1 shrimp. Sprinkle with additional oregano, if desired.

Alternative Method For a simpler version of this recipe, combine 1 cup prepared hummus with 1 tablespoon chopped fresh oregano and 1 teaspoon grated lemon peel. Spread mixture on crackers. Top each with 1 shrimp. Sprinkle with additional oregano, if desired.
