Blackberry & Apple Sorbet

Prep Time: 15 minutes

Cook Time: 20 minutes

Freeze Time: 2 hours

Servings: 6-8


  2 lbs apples (such as McIntosh, unpeeled, stemmed)

  Cut apples into 1/2 in pieces, ore and seeds included

  1 1 lb bag unsweetened frozen blackberries

  1-1/2 cups water

  1/4 cup light corn syrup

  3/4 cup sugar

Combine blackberries, apples and water in heavy pot.
Bring the mixture to a boil over medium - high heat.
Cover pot, reduce heat to medium and simmer until fruit is tender.
Stir occasionally, about 20 minutes.
Transfer mixture to a sieve.
Over a bowl press to force through fruit and liquid.

Discard solids left in the sieve.
Return puree to the same pot and add sugur and corn syrup.
Stir over low heat until sugar dissolves.
Pour puree into a 13x9x2 in. glass dish.
Freeze until solid, about 1 hr.
Break up frozen puree chunks and place in food processor.
Puree frozen chunks and return to same dish.
Cover and freeze till firm enough to hold shape in a spoon, about 1 hr.
