Ingredients

  1/2 cup sliced yellow summer squash

  1 clove garlic, minced

  2 tsp olive oil

  2 cans (19 oz. each) vegetable soup

  2 medium plum tomatoes, chopped

  1 tsp chopped fresh oregano

Directions

1. In medium saucepan cook summer squash and garlic in olive oil over medium heat until tender, stirring constantly. 2. Stir in soup and tomatoes. Cook over medium heat until heated through, stirring frequently. Ladle into bowls. Sprinkle with oregano. Serve with your favorite flavor of Zesta® Saltine Crackers.
