Cheesy Broccoli Soup

Prep Time: 10 minutes

Cook Time: 25 minutes

Servings: 4

Ingredients

  1/4 cup chopped onion

  1 Tbs butter or margarine

  1-1/2 cups milk

  3/4 lb. (12 oz.) VELVEETA Pasteurized Prepared Cheese Product , cut up

  1 pkg. (10 oz.) frozen chopped broccoli , thawed, drained

  Dash pepper

Directions

1. Cook and stir onion in butter in 2-quart saucepan on medium-high heat until tender.

2. Add remaining ingredients; stir on low heat until prepared cheese product is melted and soup is thoroughly heated.

3. Top each serving with toasted slivered almonds, if desired.

4. Microwave Directions: Microwave onion and butter in 2-quart microwavable casserole or bowl on HIGH 30 seconds to 1 minute or until onion is tender.

5. Add remaining ingredients; mix well.

6. Microwave 6 to 8 minutes or until prepared cheese product is melted and soup is thoroughly heated, stirring every 3 minutes.

7. Serve as directed.

Variations:

Substitute frozen chopped spinach for broccoli.

Substitute frozen cauliflower, chopped, for broccoli.

Substitute frozen asparagus spears, chopped, for broccoli.
