15 Minute Cheesy Chicken & Vegetable Rice

Cook Time: 15 minutes

Ingredients

  1 lb. boneless skinless chicken breasts, cut into chunks

  1 can (14-1/2 oz.) chicken broth

  2 cups MINUTE White Rice, uncooked

  1 pkg. (16 oz.) frozen vegetable blend, thawed

  3/4 lb. (12 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up

Directions

Spray large skillet with no stick cooking spray. Heat skillet on medium-high heat. Add chicken; cook and stir 3 minutes or until browned.

Add broth; stir. Bring to boil.

Stir in rice, vegetables and prepared cheese product; cover. Cook on low heat 5 minutes or until chicken is cooked through. Stir until prepared cheese product is melted.
