Turkey Salad Croissant Sandwiches

Cook Time: 1 hour 40 minutes

  1 pkg Honeysuckle White® Rotisserie Turkey Tenderloins

  Or, 1 pkg Honeysuckle White® Turkey Breast Cutlets or approximately 1.25 lbs. leftover whole turkey, cut into ½ inch cubes.

  1 cup roasted cashews, chopped

  1 cup celery, diced

  1 cup sour cream

  1 cup cream cheese, softened

  1 cup dried cranberries

  1/2 cup onions, diced

  Salt and pepper to taste

  12 croissants or your favorite bread

  12 tomato slices

  12 Bibb lettuce cups

Cook turkey tenderloins per package instructions. Place in refrigerator to cool. Once turkey is cool, shred or dice into 1/2 inch cubes. (Your preference)

Combine turkey, cashews, celery, sour cream, cream cheese, cranberries, and onions in a bowl and mix. Salt and pepper to taste.

To serve, split croissant. Assemble lettuce and tomato on the bottom bun. Top with 3-4 tbsp. of turkey and place top bun.
