Korean-Style Beef Meatballs

  2 green onions

  1 red onion

  1 lb. Market District 80% lean ground beef

  1 Tbsp. Sushi Chef® toasted white sesame seeds

  2 Tbsp. Giant Eagle reduced sodium soy sauce

  2 Tbsp. Market District Sriracha

  1 large Giant Eagle egg

  2 Tbsp. olive oil

  2 cup Nature's Basket baby spinach

  2 10-oz. pkg. Steam Fresh® brown rice, cooked

1. Thinly slice the green onions, separating the dark green slices from the white and light green slices. Peel and halve the red onion, then thinly slice. In a medium bowl, add the beef, the light pieces of green onion, half of the sesame seeds, half of the soy sauce, and half of the Sriracha. Add the egg and mix to combine.

2. Heat oil in a large frying pan over medium-high heat. Use a soup spoon to form meatballs that are about 1-inch wide, 10-12 total. Put the meatballs into the pan as you make them. Brown the meatballs on one side, then turn over.

3. Scatter the red onion slices around the meatballs so they’re touching the pan and cooking in the juices. Cover the pan and continue to cook the meatballs, moving them only as needed, until they’re nicely browned and almost cooked through, about 10 minutes or until the internal temperature reaches 160°F. Remove the meatballs, leaving the onions in the pan. Add the spinach and the reserved dark green scallions. Cook until just wilted.

4. In a microwave-safe bowl, heat the brown rice for 1 minute and then stir; heat for additional 30-second bursts until hot, if needed. Alternatively, you may heat the rice in a saucepan over medium heat, stirring frequently, for about 3 minutes until hot. Add 1 tablespoon or so of water to prevent sticking, if necessary.

5. Divide the rice between 4 bowls and top with the meatballs and spinach mixture. Drizzle each portion with the remaining soy sauce, Sriracha, and sesame seeds to taste. Enjoy!
