Coca-Cola® Tailgate Chili

Prep Time: 10 minutes

Cook Time: 1 hour 30 minutes

Servings: 10

Ingredients

  As needed olive oil

  2 yellow onion, large, diced

  1 1/2 Tbs garlic, minced

  To taste salt

  To taste pepper

  4 tsp cumin

  1 1/2 tsp chili powder

  1 1/2 Tbs chipotles in adobo, minced (about 2 chilies)

  2 lbs ground beef

  4 1/6 oz red beans, drained, rinsed

  4 1/6 fire roasted tomatoes, canned, diced

  2 cup Coca-Cola®

  2 cup chicken stock

  2 jalapeno, thinly sliced

Directions

1. In a large pot over medium-high heat, add olive oil and sauté onions and garlic until soft, about 3-5 minutes. Add seasonings and minced chipotle and cook an additional 2 minutes. Add ground beef and cook until browned.

2. Add remaining ingredients, except jalapeno, bring to a boil, and reduce heat to low. Simmer for 1 hour. Serve with fresh jalapeno slices.

Variations - To increase the sweetness and decrease the heat in this dish, add more Coca-Cola® and use less chicken stock.
