Cinnamon Applesauce Bread

Prep Time: 15 minutes

Cook Time: 1 hour

  1-1/2 cups flour

  1 Tbs CALUMET Baking Powder

  1-1/2 tsp ground cinnamon

  1/4 tsp salt

  1 egg

  1 cup chunky applesauce

  3/4 cup firmly packed brown sugar

  2/3 cup skim milk

  2 Tbs oil

  1-1/2 cups POST Bran Flakes

  1/4 cup chopped walnuts (optional)

Heat oven to 350°F.

Mix flour, baking powder, cinnamon and salt in large bowl.

Beat egg in small bowl; stir in applesauce, sugar, milk and oil.

Add to flour mixture; stir just until moistened. (Batter will be lumpy.)

Stir in cereal and walnuts. Pour into 9x5-inch loaf pan which has been sprayed with no stick cooking spray.

Bake 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan.

Cool completely on wire rack.

Note: For easier slicing, wrap bread and store overnight.
